My Tonic water has the base note of bitter quinine and a very definite top note of real lemon oil and bitter orange but leaves a space in the middle for a fine spirit to occupy — think of my N°1 London Tonic as a grand frame in which to exhibit a masterpiece.
The shock of quinine is balanced with Sicilian lemon oil and the essence of bitter orange peel. Less than one calorie per serve.

The wonderful smell of my father’s Whisky and Dry has stayed with me over the years. This memory of the East End when men wore suits to the pub and could hold their liquor was key when it came to creating my own recipe. John Matthews (1808–1870) was an English-born American inventor and soda water manufacturer. He is known as “The Soda Fountain King”. My London Soda water retains the simplicity and purity that Mathews insisted on. Clean and refreshing. Nothing more nothing less.
